Indian Chicken Curry

2 TBS vegetable oil
1 whole white onion chopped
6 chicken drumsticks with the skin removed
1 TBS curry
1 tsp of powdered red pepper (more if you like it spicy)
1 TBS crushed garlic
1 TBS crushed ginger
2 TBS whole plain yogurt (I use Dannon)
1 TBS tomato paste
salt and black pepper to taste

Start by adding the oil to a hot pan and add the chopped onion. Saute until it has turned a nice golden brown.

Add the chicken to the pan and stir for 2-3 minutes.

Add the curry, red pepper, garlic, ginger, salt and pepper. Stir for 2-3 minutes.

Add the yogurt and stir for 1 minute. Add the tomato paste and stir for a minute.

Add enough water (usually about 2-3 cups) to cover the chicken. Cover and cook on low-medium for about an hour. Serve with naan or rice.

Universal Studios in Florida

This summer we took a road trip to Universal Studios in Florida. We took a road trip from NC to FL and had June 26, 27, and 28 of 2016 to spend at Universal. Other than waiting in long lines, the trip was amazing! No matter your age, you will find something for the whole family. We were blown away with the Harry Potter experience including the rides, foods, and interactive wand tricks. My husband really enjoyed spending time at Moe's Bar and having the Simpson experience.

Pad Thai

Ingredients:
peanut oil or vegetable oil (Do NOT use olive or sunflower oil, they will ruin the taste)
1 package of firm tofu
Preserved pickled daikon (should be shredded or diced small)
Chives chopped into 2 inch pieces
3 Eggs
Medium sized Rice noodles soaked in warm water at least 2 hours
1 jar of Pad thai sauce OR jar of chili sauce (Namprik Pao) I have mixed the flavors or use 1 if I cannot find the other. Note for those with a shellfish allergy that Namprik Pao has shrimp paste but the Maesri Pad Thai sauce does not contain shellfish and is vegan safe. If you use Namprik add 1 TBS palm sugar or sugar.
Protein choice: Chicken breast, peeled Shrimp, Pork, your choice!

Drain the liquid from the packet of the firm tofu and set the tofu on a towel to absorb any moisture. Cut into small cubes and pan fry the tofu in 2 TBS of oil until golden brown. Add half the package of the preserved pickled daikon. Your tofu and daikon should look like this. Scramble 3 eggs and pan fry. stir this into the tofu/daikon mixture for later.

Cut the chicken into small cubes and pan fry in about 1 TBS of oil. Cook thoroughly and add 1 TBS of the Namprik Pao to flavor the chicken. Your chicken will look like this. Mix this into the tofu/daikon/egg mixture.

Note you are preparing a single serve portion at a time so your noodles do not stick. Heat your pan with oil and pan fry a handful rice noodles for 1 minute and add a cup of the tofu/daikon/chicken/egg mixture. Stir and add the raw chives and cook for another minute. Add a small handful of bean sprouts and saute for a few seconds. Plate the Pad Thai and sprinkle peanuts, cilantro and bean sprouts.

Cancun, Mexico

I have always heard about how great Cancun was and expected it would be fun. But after having visited now, I can say it is the best vacation I have ever had! We stayed at Club Regina. The hotel was clean, not overcrowded and had a great breakfast buffet. The service was fantastic and the staff made you feel special. As you can tell from the view, it was perfect. The ocean water was warm every day and the pool was cool. Although the room had a safe, I never used it.

There was no shortage of activities in Cancun either. We rented a car, which can be very expensive. I recommend using tourist bus services instead and use the time to rest! We visited Tulum, a Mayan ruin, which was about an hour drive away. I am not a very active person and found the trail to be rough when it was hot. My sugar level dropped drastically and I had to stop and devour gummy bears. Sorry no photos of the poor bears 🙂 Be prepared to see many Iguanas and lizards on the coast. My sons were amazed by the size of the Iguanas and asked if they were young dinosaurs!

Another road trip was visiting Xcaret, an eco-archaeological park, also an hour away from the hotel. It was the highlight of the trip and made me feel like I had reached heaven. We got to snorkel through the caverns, through a bat cave and butterfly cave. The water did have fish which my sons loved seeing with their goggles. We also swam in natural pools with fish as well, had an amazing all you can eat lunch buffet, and saw many animals in the zoo. I recommend getting the pass with everything included with the snorkel gear, lunch, lockers, etc. I also recommend getting there when they open their doors otherwise you will not be able to get through most of the activities. I felt like we rushed ourselves with a 1 day pass and would have preferred to spend 2 days here.
